The formation of derivatives of 2,6‐di‐tert‐butyl‐4‐methylphenol (BHT) used as an antioxidant in edible oil was investigated. Commercial oil containing BHT was heated at 190°C for 262 hr and extracted with acetonitrile. A yellow substance was isolated at the level of 7 ppb, purified by multiple thin‐layer chromatography, and identified as 3,3′,5,5′‐tetra‐bis‐(tert‐butyl)‐stilbenequinone. No published data were found on the presence of this substance in heated edible oil.
