A new anthocyanin recovery system from grape wastes based on tartaric acid‐methanol extraction followed by controlled precipitation of excess tartaric acid as potassium hydrogen tartrate is described. An artificial gape drink colored with the anthocyanin extract thus prepared was found to be acceptable.
