The extractability of whole myofibrils from true cod decreased more rapidly during frozen storage at −40°C than did the extractability of the component myofibrillar proteins. There was a 95% decrease in extractable myofibrils after 6 months in storage, but only a 23% decrease in extractable myofibrillar proteins.
