Summary A device for measuring the oil content, by a dielectric method, of fish and fish products is described. The construction of a test cell suitable for such measurement is outlined together with techniques for initial extraction of the sample. Results for oil content obtained both by the dielectric method and by soxhlet determination are reported for herring, kipper and fish meal. The instrument was designed to be robust, direct reading and simple to operate, agreement with soxhlet within 1% fat was obtained.
