The level of arginine, determined by a modified Sakaguchi method, was used to establish the degree of immaturity in freshly harvested and cured peanuts. Precision and accuracy of the method is reported. Calibration curves were plotted to estimate the degree of immaturity in peanuts. The method was tested under field conditions and found to be an accurate measure of immaturity.
