Summary. The tubers of certain species of yams, Dioscorea alata and Dioscorea rotundata , are susceptible to a form of low temperature injury or ‘chilling damage’when stored at temperatures substantially above zero (i.e. 10‐12°C). Complete breakdown of the tuber tissue occurs shortly after return to normal tropical ambient temperatures.
