SUMMARY A simple, direct calorimetric method requiring no distillation is described for the determination of potassium sorbate in dried fruits. The method makes use of the oxidation of sorbic acid to malonaldehyde, which reacts with thiobarbituric acid to form a red pigment that is measured photometrically.
