SUMMARY Reports by American authors that a significant proportion of meat purchased in the retail market is contaminated with salmonellæ have been confirmed in South Australia. The distribution of various intestinal pathogens in meat and meat products is noted, and attention is drawn to the hazards which may arise during storage and cooking. An investigation into a variety of domestic fertilizers containing animal residues has failed to reveal any significant contamination with intestinal pathogens. The apparent discrepancy between the high yield of salmonellæ from meatmeal samples and the absence of these organisms from mixtures of meatmeal and inorganic salts may be explained by the low pH of the latter.
