Make‐It‐Yourself (MIY) Food Stations: Long‐Term Healthy Lessons from Nordic Cafeterias

Do Make‐It‐Yourself (MIY) food stations in the cafeterias lead people to eat healthier or do they lead people to eat more? This three‐month study involving 11,870 lunch guests in nine Nordic hotels shows that 4% more diners selected Caesar salad when it was presented in a “Make It Yourself” station as opposed to premade option. Unfortunately, MIY station also led people to serve themselves 37% more of beef. MIY food stations allow diners to sample more widely, but they also made diners to indulge more in other foods. Although using MIY station can effectively increase the percentage of people who try healthy foods, it may not restrain diners from still over‐serving large amounts of less healthy foods.
