We investigated the effects of chitosan oligosaccharide (GO2KA1) on the level of postprandial blood glucose in adult subjects with normal blood glucose level. Postprandial blood glucose levels were tested for 2 hours after sucrose administration with or without 500 mg of GO2KA1. GO2KA1 significantly lowered the mean, maximum and minimum level of postprandial blood glucose at 30 and 90 min after meal. Additionally, GO2KA1 treatment reduced the AUC and C max while T max was significantly increased. Our findings suggest that GO2KA1 reduces postprandial blood glucose rise due to slow absorption of glucose in the small intestine, via carbohydrate hydrolyzing enzymes inhibition.
