A study on the effect of breakfast skipping on dietary behavior among middle school students in Incheon, Korea

This research was performed to provide basic data for the solution of skipping breakfast of middle school students in adolescence. The actual state of having breakfast, dietary life, eating habit and nutrition knowledge and the relationship between these factors and frequency of having breakfast were studied for 357 male middle school students in Incheon, Korea. As the results, the effective factors in skipping breakfast were related to family type, mother¡ s occupation, parent¡ s attitude toward skipping breakfast, and nutrition knowledge. Family type of single parent, no parents or with grand parents has low frequency of having breakfast (p<0.05). The frequency of having breakfast was low if a mother runs her own business and high if mother was professional or housewife (p<0.01). Skipping breakfast has close relationship with school activity, grades and eating habit. As the frequency of breakfast was high, the score of eating habit was high (p<0.001), and so was score of nutrition knowledge. To enhance adolescents¡ having breakfast rate, it is necessary that school nutrition teacher and local community perform a nutrition education for both students and their parents. This will make an education effective by connecting school and home education, to develop and provide various programs in nutrition education.
