Potato consumption among adults in the U.S.

According to CDC, 26.3 percent of U.S. adults consumed the recommended 3 servings of vegetables per day in 2009. Potatoes, one of the most commonly consumed vegetables, are an important and affordable source of potassium (K) and dietary fiber (DF). We examined potato consumption using data from the 2005–2006 and 2007–2008 National Health and Nutrition Examination Survey for males and females aged 19–30, 31–50, 51–70, and 71+ y. Appropriate survey weights were used to calculate average consumption of white potatoes (WP) on the day of the survey, including baked, boiled, roasted, stewed, stuffed, mashed, French fried (FF), potatoes with sauce, hash browns, homefries, potato skins and potato salad. Males 19–30, 31–50, 51–70, and 71+y consumed an average of 92.7, 64.1, 67.1, and 62.2 calories (kcal) a day from WP, respectively. Females 19–30, 31–50, 51–70, and 71+ consumed a daily average of 61.4, 51.5, 36.3, and 35.7 kcal from WP, respectively. Average kcal from FF potatoes declined from 78.5 and 39.4 calories among men and women 19–30 to 9.7 and 4.6 calories among men and women 71+. Among adults 19–99, 50 percent of adults did not eat any WP on the day of the survey, and the 90th percentile of WP consumption was 103 grams, or less than one medium potato. Seventy‐five percent of adults did not eat FF potatoes on the day of the survey. Encouraging potato consumption may be an effective way to increase vegetable consumption among adults.
