The post 9–11 awareness about food defense has evolved into a growing interest in food protection in the US, an interest that, until recently, remained nascent globally. Recent events including melamine in China and the unintentional contamination leading to the PCA recall have highlighted the vulnerability of the global supply chain to economic adulteration as well as intentional contamination. This ongoing research project provides an integrated multifunctional research, education and extension approach to better secure the safety and defense of the nation's food supply, utilizing the food safety risk analysis paradigm to empower the food protection community to better protect the food chain. The project has used the guidance of an expert panel from industry to define terminology in industry‐relevant ways and to identify emerging and the most pressing food defense issues. The grant team has conducted extensive applied research with the FDA's CARVER + Shock tool both domestically and internationally. Grant outputs include academic and professional development courses suitable for a practitioner's certificate in food defense and a series of short courses to fill a critical gap in the Nation's food defense by assisting small businesses in understanding and preparing effective food defense plans.
