Easy accessibility to a vegetable beverage can result in a marked increase in vegetable intake: an approach to improving vascular health

USDA 2005 Dietary Guidelines emphasize the need for increasing vegetable consumption. However, most Americans do not meet the 2005 guidelines. This 12 week study was designed to determine if incorporation of a vegetable juice in conjunction with Dietary Approach to Stop Hypertension (DASH) diet education would improve vegetable intake and reduce select cardiovascular risk factors in adults (40‐65 yrs). Subjects (n=90: 24 male, 66 female) were randomly assigned to 1 of 3 groups (0, 1 cup or 2 cups vegetable juice). On average, subjects did not meet vegetable recommendations, unless they consumed the juice. After 12 weeks, in all groups, even with counseling on vegetable intake in their diets, only 12.5% met minimum DASH vegetable recommendations. However, when juice consumption was included, 46%, and 100% of the subjects in the 1‐ and 2‐cup groups, respectively, met DASH recommendations, compared to 7% in the 0 group. No significant within‐ or between‐ group changes were observed for BMI, hsCRP, TBARS, lipids or blood pressure from baseline. However, after 12 wks, in pre‐hypertensive subjects with systolic blood pressure (SBP) 120‐140 mm Hg and/or 80‐90 mm Hg diastolic (DBP) consuming 1 or 2 cups vegetable juice (n=15) there was a significant decrease in SBP, DBP and mean arterial pressure (p<0.05) over time.
