Validation of a new antioxidant nutrient food frequency questionnaire in Whites and African Americans

Aim To validate a newly developed food frequency questionnaire (FFQ) assessing self‐reported antioxidant nutrient intakes in Whites and African Americans. Methods 164 healthy Whites and African Americans (AA) in North Carolina, age 20–45, completed a demographic and health questionnaire that included the new 92‐item antioxidant FFQ; completed four 24 hour dietary recalls (24‐HDR); and provided blood samples that were analyzed for plasma levels of carotenoids, tocopherols, vitamin C, and cholesterol. Results The mean age of participants was 31.9 years, 51% were AA, and 52% were female. Median antioxidant nutrient intakes from the FFQ and mean of 24‐HDR were similar, with differences generally below 10%. Adjusted Pearson's correlations of intakes from the FFQ and 24‐HDR ranged from 0.29 to 0.56 (α‐tocopherol and β‐carotene in Whites, respectively); correlations for the FFQ and biomarkers ranged from 0.15 to 0.33 (α‐tocopherol and β‐cryptoxanthin in AA, respectively). When intakes from the FFQ and 24‐HDR were categorized into quartiles, agreement rates for classification into the same or adjacent quartiles were between 66–89%; misclassification to the opposite quartile was rare (0–8%). The biomarkers showed linear trends of increasing plasma concentrations with higher FFQ‐derived intakes (p<0.001). Conclusion This FFQ demonstrated high validity for collecting self‐reported antioxidant nutrient intakes in both Whites and AA.
