
A new technology for producing inulin with high degree of polymerization

The paper deals with methods for producing inulin. The authors substantiate advantages and disadvantages of various methods and specify the most promising method for inulin extraction using new technologies of physical effect on inulin-containing extract. It is shown that physical effect on the extract in the process of inulin production may induce high prebiotic properties necessary for human health. The practical effect is presented as a graph of inulin yield at different temperature conditions.
