This article provides an overview of the current state of research, which consists in the practical confirmation of the following hypothesis: the task of creating high-quality food products containing essential nutrients in a balanced state and ballast substances can be solved by developing a line of functional food products based on poultry meat. These functional products contain targeted nutrients for the nutritionally adjusted nutrition of children and pregnant women, taking into account the specific indications of doctors for their various conditions and diseases. The need to increase human immunity and metabolism, as well as its adaptive potential, is due to negative external influences from environmental, social and economic factors. Consequently, today there is a need to create a new generation of food products, which should provide the human body with useful substances and stimulate its protective functions.
