Methods of mathematical and statistical treatment of experimental results in technology of interesterification of oils and fats have been used. The optimal technological modes and parameters that ensure reduction of amount of expensive oil and the cost of the ongoing technological stage have been established. New data in the direction of interesterification of oils and fats have been obtained. The main reasons providing quality improvement and ensuring safety of interesterified fats have been established.
