The article presents the results of a mathematical description of heat and mass transfer processes occurring throughout the volume of the extracted substance. A mathematical model has been developed that describes the regularities of the transition of a solute from a solid to a liquid phase. The procedure of computerized calculation of the extraction process was performed. The dynamics of the relationship between heat and mass transfer processes in the product was studied using the Matlab software package.
