Sendudok is a plant that is familiar to people in Southern Tapanuli. This plant grows wild and is quite abundant. However, the lack of public understanding of the benefits of this fruit so that there is no optimal processing. The purpose of this study was to obtain information on the nutritional value of sendudok juice. The experimental method was conducted purposively without comparing with the same plant from other regions. The results showed that drinks from sendudok juice have nutritional benefits that are beneficial to health. That shows that this fruit has considerable potential to be developed into a typical product in South Tapanuli.
