The objective of this work was to describe the development of greenhouse solar dryer for germinated parboiled Thunya-Sirin glutinous riced ried. Parameters studied were germinated parboiled Thunya-Sirin glutinous rice, drying temperatures at 40°C. The drying process was carried out until the final moisture content was below 8 % (dry basis, d.b.). The moisture ratio, the color difference (ΔE) and physical propertiesof the product were determined. The results revealed that the greenhouse solar dryer showed the drying time for 5 hr. The greenhouse solar dryer maintains color and nutrients of rice, this technique better prices, higher affordability level, better payback power of farmers. Therefore, drying germinated parboiled Thunya-Siring lutinous rice using greenhouse solar dryer is more suitable than unsanitary.
