Summary The microwave‐heating behaviours observed in many food‐stuffs are often complex and apparently unpredictable. To identify the underlying factors which give rise to this complexity, a novel means of classifying and predicting microwave‐heating behaviour is proposed and validated. The approach is based on the applicator type, material‐electrical size (related to physical size and electrical properties) and how the microwave field is controlled. It is shown how the classification method can provide a useful framework for the understanding of the principal factors underlying heating behaviours, as well as identifying approaches to control microwave heating.
