Synopsis The effect of reaction conditions on the yield of enzymatic hydrolysis of short cattle tendons was examined using statistical scheme of factorial experiments 2 4 . The duration of enzymatic purification of the starting material and of purified material denaturation processes, the protease concentration in reaction mixture and hydrolysis time were considered to be the main sources of reaction yield variation. An attempt was made to find the conditions leading to maximal yield of collagen hydrolysate.
