A method is described for the determination of small amounts of 1‐monoglycerides in fats. The method consists of a periodic acid oxidation, the resulting glycol aldehyde fatty acid ester then being converted to the 2,4‐dinitrophenylhydrazone derivative, which is determined spectrophotometrically. The colored solutions are stable and follow Beer舗s law in the range 0.0舑1.0% 1‐monoglycerides with a standard deviation of ŷ0.024%. Glycerol does not interfere.
