Occurrence and biochemistry of glucosinolates are briefly discussed. The chemistry of intact glucosinolates and their degradation products is considered in relation to the methods used for their determination. Different methods have been used, including ion‐ exchange chromatography, paper chromatography, high‐ voltage electrophoresis, 1 H‐ and 13 C‐ NMR spectroscopy. The quantitative analysis of trimethylsilylated desulfoglucosinolates by gas chromatography and of intact glucosinolates by high performance liquid chromatography is discussed in relation to previously used methods based on the determination of glucosinolate degradation products.
