The direct analysis of small amounts (2–50 ppm) of citric acid in refined glyceride oils and fats is described. Fat, containing citric acid, is titrated potentiometrically in a pyridine/ acetone mixture with tetrabutylammonium hydroxide (TBAH). The method is relatively simple and rapid with an accuracy better than ±5%.
