Summary The properties of peanut protein have been briefly reviewed, and procedures for the evaluation of this protein for different industrial uses have been indi cated. The determination of the solubility of the protein in different solvents, analysis of the isolated protein to determine its nitrogen and ash contents and its color when dispersed in sodium hydroxide solutions, determinaztion of the viscosity characteristics of concentrated peanut protein solutions, and specific product testing are used to evaluate peanut protein for industrial utilization.
