Summary Inter‐esterification and isomerization reactions offer opportunities to modify drying oils by changing the arrangement of the acids in the fats and oils and by changing the arrangement of double bonds and the groups around the double bonds in the fat acid chains. Although much work has been completed, much more remains to be done.
