A new method was developed to obtain lactones from butterfat. The application of lipases and capillary gas‐liquid chromatography with chiral phases for the separation of γ‐lactone enantiomers resulted in elucidation of the racemic composition of γ‐lactones from butterfat. The seasonal distribution of lactones in butterfat was determined.
