Summary Periodate values were determined on a variety of fats and oils before and after saponification by the periodic acid oxidation method of Handschumaker and Linteris. The values obtained indicate that the method is not specific for monoglycerides in natural fats and oils. Therefore previous reports of the natural occurrence of monoglycerides in fats and oils, where the periodate method has been used, may be open to question.
