Food technological aspects on the use of rape‐seed oil and other Cruciferae seed oils as salad oils, in margarine, shortenings and some other foods are briefly reviewed. It is concluded that these oils in hydrogenated or nonhydrogenated form may compete favorably with other vegetable oils and animal fats.
