Summary A technique has been described which was found to yield specific and reproducible evaluations of the reversion properties of shortening samples containing hydrogenated soybean oil. It was shown to be advantagenous to conduct the test by smelling rather than by tasting. The use of a control rendered the test specific and by expanding to a series of controls of varying concentrations, it was found possible to increase the discrimination of the test. The statistical method reported by Dr. Bliss (3) was used to analyze the data obtained.
