Model conditions were utilized to test the antioxidative activity of a methanolic extract of ajowan ( Carum coptimum ) (MEA). MEA was less effective than butylated hydroxytoluene in protecting against oxidation of emulsified linoleic acid measured by coupled oxidation of linoleic acid‐β‐carotene, conjugated diene values, and the thiobarbituric acid values. Ajowan may have potential as a source of natural antioxidant.
