Purified lipases from pork pancreas, Rhizopus arrhizus and Leptospira biflexa hydrolyze the triglycerides of pork very low density lipoproteins (VLDL), while higher density lipoproteins are not affected significantly. The velocity versus substrate curves for the VLDL were sigmoid.
