Cover Issue 4: The microstructure and physicochemical properties of amylose and amylopectin fractionated from kudzu starch are studied by Leping Dang and co‐workers in article number 1500305 . The IR absorbance band at 1048 cm −1 is just sensitive to the amount of ordered or crystalline starch and the band at 1022 cm −1 is characteristic of amorphous starch in this determination. The ratio of the heights of the bands at 1048 to 1022 cm −1 expresses the amount of ordered starch to amorphous starch. Iodine complexes of the different starches are also investigated, showing clear color differences among them. These results should inform future developments in practical industrial applications of kudzu starch, and enable improvements to be made in the functionality of products in which it is incorporated.
