The NIS‐Elements image analysis system, together with microscopic observation, was used to measure the particle size of acetylated distarch adipate (ADA) in three suspensions; a commercial mixture containing other additives and two pure commercial ADA starches. From these data, the particle size distribution was calculated. The starch in the mixture was identified as wheat ADA, and the normality of the size distribution for volume fraction tested. Image analysis can be recommended as a simple and rapid method for identifying the origin of modified starches in commercial powder mixtures.
