Enzymic hydrolysis of starch in PEG ‐ Dextran aqueous two‐phase system in a batch 2L reactor was studied under various conditions of temperature and agitation rates. It was found that a rotational speed of 150rpm gave the best results at 55°C as it can be judged by measurements of glucose concentration. Higher agitation rotational speed resulted in significant decrease of glucose production.
