The well‐known phenomena of product inhibition and substrate saturation in alcohol fermentation are studied by means of unstructured models, based on Monod's equation, using the experimental data of batch fermentations of corn starch hydrolysate solutions. The evaluation of the results of fermentations carried out under different starting conditions, through integrated versions of kinetic models derived from that of Monod case by case, contributes to shed light on the inhibitions exerted on productivity either by product or by substrate in this raw material.
