The grafting of acrylonitrile (AN) onto amylose and sodium salt of partially carboxymethylated amylose samples having different degrees of substitution has been carried out using ceric ammonium nitrate (CAN) as redox initiator. The saponification of all the PAN‐containing graft copolymers has been carried out by methanol precipitate method. The water retention values of all the graft copolymers have been measured and compared. The results have been discussed.
