A novel approach is demonstrated to the determination of pasting characteristics. Using a rotatory viscometer measurements are carried out at constant torque and varying angular speed of rotation. Applied device allows application of low torque, and in consequence studies of starch pastes at low concentrations became available. A model is proposed for characteristics of pastes which involves two parameters independent of measurement conditions.
