An automatic viscometer is described, that will determine the viscosity of starches more rapidly, and with less labour than is possible by conventional techniques. An accurately prepared slurry of the sample is poured into the instrument, where it is pumped under pressure through an electrically heated tube, which gels the starch. Viscosity is measured by a commercially available viscometer. The temperatures of gellation and measurement are thermostatically controlled. The instrument can receive samples at the rate one every 10 min, and the viscosity value of each sample is available within 7 min. Measurements can be carried out at either constant shear rate, or constant shear stress, and the results are displayed on a pen recorder.
