The action of three preparations of α‐amylase of fungi on normal maize starch granules and on various starch granules was studied. Time courses of the enzymatic reaction were followed quantitatively and qualitatively. Namely, the extent of hydrolysis was followed by measuring the amount of total carbohydrates solubilized and glucose released. Soluble carbohydrates were separated and located by paper chromatography, and starch granules attacked by enzymes were observed by means of a scanning electron microscope.
