Two groups of α‐amylase isoenzymes have been identified in germinated wheat, but only one group would adsorb on to undamaged starch granules. This group represented 84.2% of the total α‐amylase activity. The non‐adsorbing isoenzymes were electrophoretically identical to the α‐amylases of immature wheat grain.
