Abstract Microscopic Examination of Hypochlorite‐Oxidized Potato Starch . By means of light and scanning‐electron‐microscopy the primary oxidation effect of hypochlorite is proved to affect the interior of the potato starch granule. Electron‐microscopic photos show hollows in the kernel which are brought about by oxidation.
