Based on the Paloheimo‐Vainio method and making use of the contemporary iodine spectrophotometry, an improved method for quantitative starch determination is obtained. Certain optical iodine‐dextrine complex characteristics are examined. The principal factors are established, which influence the molar extinction coefficient, and the kinetics of complex formation is studied. The concentration interval is specified where Lambert‐Beer's law is valid. The high level of accuracy obtained and the short analysis time make the proposed modified method applicable both for industrial and for precise laboratory investigations.
