Sugars and Sugar Alcohols. Technology and Technological Important Properties . Following a brief historical introduction the main sugars and sugar alcohols are reviewed. Sugar production and consumption are then discussed with special reference to sucrose and starch‐derived sugars. This is followed by some remarks on the technology of sugars and sugar alcohols manufacture and on their chief technological properties.
