Starch from four samples of barley and three of wheat has been isolated by two techniques. The total starches were divided into subgroups differing in average granular size, and the relative weights and the amylose‐contents of these sub‐groups were determined. In the normal cultivars, the amylose‐content of the starch was shown to be independent of granule size.
