Developments in Starch Ultrastructure Knowledge. I. Wheat Starch Granules. The observations made by Sandstedt , in 1946, have been precised and explained with considerable improvement of technics for observations, especially with transmission and scanning electron microscopy. In the outline of the present reviewing concerning new developments in the wheat starch ultrastructure knowledge are studied: 1) The development of larger and smaller starch granules, extracted from the endosperm cells or examined in situ; 2) The lintnerization or enzymatic hydrolysis of lenticular shaped wheat starch granules; 3) The hydrolysis of smaller granules of which technological importance is recalled. A tridimensional diagram is given to complete the Buttrose's one, proposed in 1962.
