The properties of glucoamylase entrapped into cellulosic fibres were studied. The immobilized enzyme was prepared by wet spinning of an emulsion obtained by mixing an enzymic acqueous solution and an organic cellulose triacetate solution. Parameters affecting glucoamylase‐fibres activity and a potential application of immobilized enzyme in converting starch to glucose were investigated.
