Recent Experiences on Native and Modified Sorghum Starch . The investigators aimed at characterizing native and modified sorghum starch not only by a number of physicochemical data but also by techniques of paper chromatography in order to gain more insight into the composition of the polysaccharide material. The native starch samples, treated with sodium phosphate and acid and modified by different temperatures yielded useful results on the basis of paper capillary and paper separation analyses which led to a better understanding of their behaviour and enabled further characterization of the sorghum starch material.
